✨ zuppa tuscana ✨ soup is clearly a theme this month, but to me there is nothing better than a warm bowl of nutrient dense goodness (it’s also really easy to prepare after a long day of cooking, but still healthy) ☺️ this recipe is #paleo , creamy, flavorful, simple, satiating, and it somehow even works it’s magic during hot summer months. here’s how:
• 1 head of dino kale • 1 yellow onion • 1 lb of ground turkey thigh • 1 qt of chicken broth (check to make sure your chicken broth has no sugar added to it 👍🏽 otherwise they getcha) • 1 can of full fat organic coconut milk • 10 small yukon gold potatoes
• 1-2 zucchini • 1 TBSP @simplyorganicfoods italian seasoning
• sea salt and pepper to taste
• 2 TBSP @chosenfoods avocado oil **** slice thin and sweat the onions in the avocado oil after mixing them with TBSP Italian seasoning, sea salt and pepper... add in ground turkey and the rest of the italian seasoning after about 10 minutes until slightly browned, add more sea salt and pepper to taste... quarter the zucchini and potatoes, stir them into meat and onions for about 5 minutes... cover all with chicken broth and bring to a boil. once boiling, reduce to a simmer and cover for 20 minutes or until potatoes are soft but not falling apart... chop kale thinly, stir in can of coconut milk and serve hot over rice or with a gorgeous slice of hot crusty bread ✨ so easy, so delicious, enjoy!
