Busy Mom Tip:
Easy make-ahead breakfast quiche for the kiddos' week of school. .
I'm a mom of 3 who happens to adore her sleep. I want to give my kids a healthy, substantial breakfast before school each morning, but let's face it... Ain't nobody got time to roll out of bed early to actually COOK something. Certainly not this mom - I'm no morning person. But I also care about what goes into my kids' bodies and I don't want to give them the usual go-to quick breakfast, which mostly means processed junk like boxed cereals or frozen waffles (all full of gluten, empty carbs, and pretty much zero protein). .
So my solution allows me to give them a healthier AND super-quick breakfast (like done in less than 5 minutes)! On Sunday nights, I make a super-simple quiche with organic eggs, a little cheese, and whatever veggies I have on hand (I particularly like broccoli, leeks, spinach, or tomatoes). If you really want to get frugal, you can use whatever leftover veggies you had from weekend dinners. Or you can use ham or sausage or even apples (apples with cheddar and onions makes for a delicious quiche that my kids love!). And if you're gluten-free, use a store-bought gluten free crust. .
Then I leave the quiche in the fridge (pre-sliced) so on weekday mornings, I just have to pop the slice in the microwave or toaster oven for a minute or two and serve them a hot, delicious, substantial breakfast that's full of omega-3, protein, and veggies! And I barely have to be awake to do it. Winning! .
6 organic eggs
3/4 cup organic milk
1 cup shredded cheese
Veggie of your choice (chopped)
Store-bought frozen pie crust
In a bowl, whisk together eggs, milk, salt, and pepper. In the frozen crust, place the chopped veggies and half of the shredded cheese. Pour the egg mixture into the crust and top with remaining cheese. Bake at 375 for 35-40 minutes until center is set. .
