Cheesy polenta (aka "Fancy grits") and blackened mushrooms.
Does this look delicious or boring?
I honestly can't tell because this has been my favorite breakfast since I was 5 years old so I get really jazzed when I see it.
I'm going to give you the recipe so you can try it for yourself.
But promise me, if you make this you'll use Crystal hot sauce.
Don't use Tabasco. Have some respect.
***Cheesy polenta and blackened mushrooms**
3 cups Prepared polenta
1/2 cup Almond milk (unsweetened)
1/2 cup Vegan cheese
1/4 cup Nutritional yeast
Salt & Pepper to taste
1 1/2 cup Mushrooms of your choice
3 tblsp Vegan butter
2 tsp Coconut oil
2 tblsp Blackening Seasoning
or Cajun Seasoning
•In a cast iron pan on medium Heat, add 1 tbsp of butter, and coconut oil. Once those are combined and melted add your mushrooms to the pan and sautee them till cooked then toss in the Cajun seasoning stir until all of the mushrooms are coated with the seasoning. Then remove from the heat add in one more tablespoon of butter and keep stirring until all of the mushrooms are coated.
•In a pot on medium heat melt 1 tablespoon butter and add in the prepared polenta, almond milk, nutritional yeast, and stir until all combined.
•Once the polenta has no lumps turn the heat to low and add in the vegan cheese, stir until melted. •Remove from heat, add salt and pepper to taste • Ladel the polenta into 2 bowls and top with mushrooms and hot sauce.
You could easily add cooked kale or a few drops of a #cbd or #thc oil based tincture to this dish right before serving as well.
And there you have a super simple #vegan , #glutenfree ,#dairyfree breakfast with an option to add a #cannabinoid supplement that you would easily digest.
